Creamy Garlic Mushrooms on Toast

  • 225g mushrooms
  • 2 cloves of garlic, minced
  • 2 tablespoons reduced-fat cream cheese
  • 1 teaspoon dried mixed herbs, such as basil or parsley
  • salt & pepper to taste
  • Low-calorie cooking spray
  • 2 slices of sourdough toast
  • 2 poached eggs


  1. Add a frying pan sprayed with low calorie cooking spray over medium heat.
  2. Add the mushrooms and stir until they soften, moving them around the pan throughout to avoid sticking.
  3. Add the garlic, herbs, salt & pepper and stir well.
  4. Turn the heat down to low, then add the cream cheese and mix well. If the mushrooms look a little dry, add more cream cheese.
  5. Serve on your sourdough toast, topped with a poached egg alongside a chilled glass of Barefoot Pinot Grigio.
