Summer is in the air! Escape to a tropical climate with this light and fruity chicken recipe made with Barefoot Pinot Grigio. This is an incredibly simple recipe that’s perfect for a casual weeknight meal. The chicken is marinated in Pinot Grigio, honey and fresh orange juice, then cooked stovetop before glazing with a honey citrus Pinot Grigio wine glaze. Sound fancy? It’s totally not! You only need about six ingredients to make this dish and we promise you’ll be coming back to it all summer long! To start, you’ll need to throw together the marinade. Pour a half cup of Barefoot Pinot Grigio into a shallow dish.

You only need about six ingredients to make this dish and we promise you’ll be coming back to it all summer long! To start, you’ll need to throw together the marinade. Pour a half cup of Barefoot Pinot Grigio into a shallow dish.

Followed by two minced garlic cloves…

Two tablespoons of honey…

Followed by a big squeeze of orange. Don’t toss the other half of the orange --- we’ll need it later!

Place two chicken breasts in the marinade, cover and set in the fridge for an hour. This would be a great time to pour yourself a glass of Pinot Grigio and catch up on emails.

After the hour is up, heat up a grill pan {or cast iron skillet!} with a little drizzle of oil. Once sizzling, add your chicken breasts! Cook chicken breasts for about 6-8 minutes on both sides, until just cooked through. When pricked with a fork, juices should run clear.

During the final moments of your chicken cooking, make the glaze. In another small saucepot, drizzle in more honey, followed by more Barefoot Pinot Grigio.

Add the juice from the other half of your orange from earlier…And, finally, the juice from a half a lime. Bring all this goodness to a simmer for thirty seconds, then cut the heat and pour over your chicken breasts along with a pinch of salt and pepper. Sizzle, sizzle. Serve this chicken with rice and beans or couscous and roasted broccoli. Enjoy!
